I've been getting quite a few new scents these past few weeks, so I figured I would put out some thoughts on a bunch of them! These are my first orders ever from Kyse, Fantome, and CP- so let's get started :D I'm a fan of STRONG scents, I don't mess around much with super subtle perfumes. I'm also not a huge fan of indie style florals (which is wild, because my favorite perfume ever is Tom Ford Black Orchid and apparently that is considered floral, who knew?). I lean more gourmand / tea / fruit / boozy / tobacco / vanilla in the scent category, so keep that in mind. ***************************
Kyse
Cacao Noisette: Cocoa powder, hazelnut, caramel, Tahitian vanilla, and soft snuggly musk. My thoughts: Smells just like Nutella, but with a little hint of heaviness to it…like musk. This is such a warm scent, I just want to cuddle with it and drink rich dark chocolate. Or, maybe just eat Ferrero Rocher. Very gourmand, but not fake sweet. A very adult cocoa scent. I really like this one. If you want a sexy hazelnut/cocoa smell, this is it. Verdict: 5/5 would FS Vanille Debauche:Vanilla Bourbon, Beeswax, Boozy Notes, Amber, Dried Fruit, Wood, and Tobacco My thoughts: Soft, smoky, woodsy tobacco with fresh, sexy vanilla extract. Seems a little light, honestly, but I do get whiffs of it through the day. It is a really strong scent on the skin, so there's that at least. The vanilla extract scent is to die for and I like the aura of mystery this scent gives off with the booze and the gentle bourbon. I smell no fruit. The vanilla is the forefront of the woodsy aspect, so if you fear woodsy/tobacco, those aspects aren't super overpowering. The boozy vanilla extract it the forefront. Verdict: 4/5 would FS Macarons:Heliotrope, marzipan, hint of cherry, caramelized sugar, velvety vanilla custard, and a soft smooth myrrh. My thoughts: My husband picked this one over Cacao Noisette when I was wearing this on one arm and Cacao Noisette on the other. He was like, 'ooh that smells good, I like that one a lot'. It does somehow remind me of biting into a raspberry macaron! Not sure where I'm getting the raspberry from, but who cares, it's heckin' fab. Sophisticated gourmand and fruity. Very nice, will full size. I get strong whiffs of this during the day, very good sillage here. Once again, impressed with the quality, not tooth-rotting sweet, but instead very intriguing and wearable. Verdict: 5/5 will definitely be full sizing this. Sérénade aux Fraises:Strawberry, passionfruit, plum, Moroccan rose, cream, Tahitian Vanilla, organic sandalwood, violet leaf, musk, and black agar My thoughts: It reminds me of a sharp strawberry scent at first, almost like a strawberry vodka. I wasn't too thrilled with how it opened up, to be honest. There was something...bitter about it? It does dry down very nicely though, giving me the feeling of a strawberry cheesecake, but not overwhelming. Soft. It's okay. Not what I'm looking for at the moment...plus it didn't seem to really line up with the expected description above. Verdict: 3/5 Gateau de Carnavale:Funnel cake, vanilla latte, toasted brown sugar, and apricot. My thoughts: Ehhh...a little disappointed. The scent is utterly faint and just not awe-inspiring for me. Sort of just smells like a faint, sugar dough. That's about it. If you like softer scents and also like funnel cake, you will like this. I just didn't get too much out of it and could barely smell this on at all. Verdict: 2/5 Miele:Honey, mango, plum, apricot, jasmine, organic tonka bean butter, sandalwood My thoughts: Opens up with pure honey. This is a sweet scent and the fruits only add more 'oompf' to the honey aroma. If you love honey, this is what you have been looking for your whole life. Somehow, it sort of reminds me of a lovely tea with lots of honey. Comforting, delicious honey aroma with the mango and apricot in the background. Verdict: 4/5 If anyone has any other Kyse reviews, I'm dying to know more about a few of their other vanillas! Getting ready to place another order with them, as I am very impressed with their scents (though, one warning, the small spray samples seem to leak terribly during shipping, which is disappointing). *********************************************
Fantome
Amria: Sultry, dark, mysterious. Crushed rose petals, honeyed figs, black currants, and black tea. Hints of tonka bean, orange blossoms, amber, and dragon's blood My thoughts: Starts out very berry heavy. There's something powerfully green in this. The amber is soft. Unique scent. Not totally in love with it yet. It makes me think of red berries and sharp green thorns. This isn't floral, but it also isn't straight fruity. If you like botanical and exotic scents, you will probably like this. Not a warm scent, sort of chilly actually. Literally, I think of thorns and berries when wearing this. Exotic and sultry is accurate, but also -green- and sort of sharp. Verdict: 3/5 Ectoplasm: Spooky, goopy marshmallow over bone chilling white musk, sweet amber, a gossamer sugar glaze, dark myrrh, and creeping greenery My thoughts: At first glance I really liked this, but then it changed into straight botanical. The marshmallow gives me strong vanilla bean vibes for some reason, which I like. Perhaps it's that tasty sugar glaze? The greenery starts out a little strong and persists a little too much for my tastes. This scent is also very strong, I can smell it emanating from under my long sleeve shirt. I'm shocked I didn't like it, considering so many people have wonderful things to say about this scent...but the greenery is just overpowering on my skin. Verdict: 2/5 - it's just a little too odd for me. It's not gourmand in my opinion, it's more botanical and green. The Fox Sisters:Spiced cardamom cake with orange zest and candied red currants, caramel cream, dragon's blood resin, and flecks of vanilla bean. My thoughts: A winner! Spicy orange, vanilla cake! A little bit of tea is in the aroma, from what I'm getting. Pretty, but sort of faint. Maybe 2-3 hours on my skin. Verdict: 5/5 *********************************************
Cocoa Pink
Black Apple Noel: CP Black, juicy golden delicious apples smothered in mouthwatering sticky sweet caramel coating and rounded out with ghostly ribbons of vanilla bean noel My thoughts: OMG. Seriously, delicious apples just oozing with creamy caramel! The vanilla bean makes this totally decadent. Literally, this makes me think of biting into a delicious apple, the crunch, the tartness, and the yummy caramel make this a winner. So glad I bought this as a FS. I sprayed this on during the day and the next morning I woke up in a yummy cloud of caramel apple in my bed. Verdict: 6/5 Jean's Ghost:Blood red rose petals, Madagascar vanilla, sparkling champagne overflowing her glass, vanilla ice cream flecked with aromatic beans, bright plum and maraschino cherries for Jean Harlow's ghost. My thoughts: Possibly too floral. Maybe the champagne is ruining this for me? Shock. Any time I try smelling this, I just don't like it. This is not a gourmand scent, FYI. Very heavy on the rose, I get no cherry or vanilla in this. This is basically if some drunk bro spilled his Brut all over you and then sprinkled you with rose petals XD Verdict: 1/5 - not for me Naughty Pumpkins:Sexy foodie scents. Spiritueuse Double Vanilla and exclusive triple amber blend CP Black mixed together. Then, sweet pumpkin is added in. My thoughts: light. Smells like sweet vanilla with pumpkin, a few fall spices. But, this is a very gentle scent and I'm not in the market for gentle at this point. The amber is way too soft, barely noticeable. Verdict: 4/5 - it's yummy, I'm just not down for it at the moment Magnetic:Exotic sandalwood infused with gorgeous streaks of black vanilla bean, sugar crystals, rum raisin, smooth tonka, tobacco leaf and golden amber - a blend to keep you coming back for more My thoughts: Oh, yes. Gorgeous. Deep and mature. Elegance in a bottle. Definitely smell the vanilla and the rum raisin. Kinda boozy, but the sandalwood makes this complex and warm. Sandalwood does get stronger on drydown. Would maybe FS Verdict: 4/5 The Unred: This blend would make any vampire or other undead creature stalk your bathroom. Buckets of bloody orange juice, sweet vanilla, bourbon vanilla, sandalwoods and ambers. Hide this one well or you will find it missing by morning My thoughts: I'm mostly just getting orange juice from this, so...idk. Maybe a brunch sort of scent. It makes me think of drinking a mimosa with my gal pals. Sometimes, this also has a creamsicle scent to it, but I already have a perfume like that. Don't get me wrong, it's nice. I just don't need another like it at the moment. Verdict: 4/5 - if you like mimosa's or creamsicles Cranberry Noel:Tart cranberry with no spice notes, sweetened with vanilla bean noel My thoughts: OMG. Berries and cream! Rich, ice cream like vanilla. This is delicious. Does dry down a bit like a cherry throat drop though...yet, somehow still yummy? This was a freebie I received and it certainly surprised me! So anyone having a diet going on? Don't blame me if you gonna bake this. I know this may sound like a LOT when you read the ingredients, but I made this in a 25 by 20CM pan, and I wanted to share it with some friends and family. So cut this in half, or 25% less, but make sure, you get thick layers. It is really important to get thick layers. A video recipeif anyone's interested Recipe : Cookie layer : - 240gr choco chips - 420gr flour - 340gr butter - 3 eggs - 200gr brown sugar - 200gr white sugar Melt the butter and add it to a bowl. Add the white+brown sugar to it, give it a good mix, until combined nicely. Add some vanilla essence depending on your taste, 4 eggs and mix it again. Make sure the butter is not hot, we don't want to cook the eggs. Add the flour, pinch of salt and mix it. Scrape the edges mix, add chocolate chips and mix it again with the hand mixer or spatula. Rest in the fridge for half an hour to 1 hour. Oreos for Oreo layer. Brownie layer: - 225gr butter - 350gr melted chocolate - 4 eggs - 200gr white sugar - 200gr brown sugar - 90gr flour - 50gr cacao On top of 4 eggs, add white and brown sugar give it a mix. Melt the butter, make sure is hot, and add the chocolate in it. Make sure you cut your chocolate as small as you can. After you put the chocolate in the hot butter, cover it with a plate for around 1 minute. Not more than 1 minute. Then take a spatula and mix slowly. It should melt pretty easy and combine nicely. Also make sure to have the chocolate around room temp and not cold from the fridge. Now on that mixture of eggs + sugar, add some vanilla and pistachio or almond essence, and the melted chocolate with the butter. Give it a mix, add your flour and cocoa powder and mix it again. Align a baking sheet on your baking pan that's already greased with the non stick spray or a little butter. You do this if you want nice edges, it helps the baking sheet to stick better to the pan. Add the cookie mixture first, use a spatula to even it out on the pan, add Oreos on top of it, and then add the brownie mixture. Cook for around 50 minutes at 180 degree Celsius without fan. NO MORE THAN 50 minutes. You can't do any test to be sure if this is cooked trough or not. At any time you gonna try to put a toothpick in it to check it is gonna come out with a lot of melted chocolate on it. If the top started to crack that means is cooked. And don't worry, the brownie layer will be fudgy and not cakey or overcooked. At least mine wasn't overcooked. The most important thing is to let this rest overnight. I didn't and when I cut into it, I still had melted chocolate. But the next day, it was the most beautiful cake thingy that I made. Is really great if you eat it out of the fridge. Is way better when is cold. I topped mine with some vanilla ice cream with stracciatella, and caramel of course. As this wasn't sweet enough already. I hope you gonna enjoy it! So, after lurking on this sub for a good while, I finally bit the bullet and bought my first Indie perfumes ever. I went with Kyse simply because it was the most affordable place to start. The samples have been resting for 4-5 weeks although I did try them also after one weeks rest. My husband (D) also tried several samples with me. Cacao Noisette - *Cocoa powder, hazelnut, caramel, Tahitian vanilla, and soft snuggly musk *. This was a huge disappointment the second I opened it. The cocoa and hazelnut are there, but there is a very acrid, burnt note. My guess is that's the caramel. It doesn't have any of the smooth creamy Nutella smell I was expecting. It didn't change on the skin either, either for me or D. D called it the smell of cheap compound cooking chocolate. It did mellow over time but not for us - 1/10. Serenade au fraises - Strawberry, passionfruit, plum, Moroccan rose, cream, Tahitian Vanilla, organic sandalwood, violet leaf, musk, and black agar. My first impression of this scent was Robitussen cough medicine. D agreed with this. The strawberry is overpowering everything else until the scent dries down and then tiny hints of the sandalwood, rose and passionfruit come but they are fleeting before it's just cough medicine and Agar. The scent didn't improve over time - 2/10. Peche au Yuzu - Peach, Yuzu, Jasmine, Vanilla, Tonka Bean. This one is the exact smell of ambi pur toilet spray. Very jasmine on the first test but after resting the peach is evident and the citrus twang is there. Not something we'd wear but my MIL liked this one so she can have it lol. 3/10. Crema di Lime e Cognac - Cream, keylime, and green cognac, with nuances of bamboo and hay to keep the sweetness in check. This one was sublime! At first test it was creamy and boozy; when tested after longer resting I freaked out a bit because it had changed to the smell of pressed herbs and flowers in a silk pouch on expensive bed linen. This must have been the bamboo note. That was still an excellent smell though. After dry down the original scent returned. The lime, cream and Cognac have got such lovely interplay, there is something vaguely like a suntan lotion smell going on so this reminds me of the beach. A boozy, sophisticated beach. This one smells like wealth, but fun. Good sillage here too. Loved it and will full size. 10/10. Vanille debauche - Vanilla bourbon CO2, beeswax, boozy notes, amber, dried fruit, wood, tobacco. This one was the surprise of the bunch. For some reason both D and I thought there was patchouli in this on first try. It changed a lot after resting. It was sandalwood, amber and tobacco at first but dried down into very sweet booze. Then the vanilla bourbon comes out along with powdery amber and beeswax. It all melds together with the boozy note to become a very aerated smell. It's a grower and I'll probably finish the sample but probably wouldn't full size as it did go into too sweet territory for me. On D it smelt pleasantly powdery and woody. 6.5/10. Vertigo Cuir - leather, green notes, fresh florals, caramel, vanilla, and musk. This was a disappointment to me but D loved it. I only got that acrid note and fresh, untreated leather. I notice there's caramel in this one so I guess caramel is just not for me. It did mellow over time and the leather came out softer but it was still literally leather and musk, didn't get anything green or floral whatsoever. For me a 2/10 but for D 10/10 he is looking to full size. In the biggest size they've got, no less. Elegance sombre - birch leaf, orange, cocoa, butter notes, bourbon vanilla, oak moss, coffee, benzoin, patchouli, and a slight touch of licorice. Started out liking this one as the orange, oak Moss, birch and vanilla were prominent but then it dries down into something I'm not sure I like and starts to smell like old man aftershave. I think this probably could do with another go down the track. 5/10. Sucre et fleurs - jasmine, lily, green notes, pistachio, honey, frankincense, vanilla, cedar and benzoin. This one was fairly boring actually. It did go into toilet spray territory as jasmine was foremost, but there was a lot happening underneath that top note. I got most of the other notes in faint wisps so maybe this needs to be revisited after some more rest. 5/10. The TAT to Australia was sensational. Overall I thought the majority of items chosen didn't have great throw or sillage. But the lasting power was very good, could still smell the next morning on the wrist. Overall more misses than hits but that's to be expected when learning all the new smells and refining a scent profile. I will order new samples from this house when we go to full size our two favourites. I learnt some things in the process - caramel is no, and booze is a yes! Now just desperately waiting for Deconstructing Eden and Siren song samples to ship so I can do more reviews!

I'm by no means a serious chocolate connoisseur, however I do enjoy a nice piece of the dark stuff and thought I'd buy a few bars and review them here; hopefully this will help narrow down some options for those of you who are looking to buy some craft chocolate. Keep in mind that what I purchased was primarily based off of my desire for rich textures. Goodnow Farms Esmeraldas 70% I can see why this bar is well-liked, as it has a conspicuously approachable flavor as far as dark chocolate goes: it's definitely jammy/grapey as the tasting notes describe, with very strong buttecream/dairy notes as well. It reminds me of buttered toast topped with a deep, dark berry jam that is both sweet and tart; this one has an overall very familiar, "safe" taste that's very straightforwardly pleasing, but lacking some depth at the same time (me personally, I want a smooth/moderate bitterness with a bit more complexity and nuances). Mouthfeel decent but a bit tacky due to not enough cacao/cocoa butter; there is also a slight grain to the texture if you outright chew through it, meaning the beans themselves aren't 100% finely ground. Goodnow Farms Special Reserve 100% Cacao Remarkably silky, decadent texture; arguably the smoothest and richest out of the bunch, which tells me that the nibs are meticulously ground to a very fine texture and are supplied with liberal quantities of cacao/cocoa butter (unlike Esmeraldas). Very natural, vibrant cacao taste that has prominent lemongrass notes cut with a subtle, fresh, creamy milk-like taste and richness; some natural bitterness that is balanced by a bright acidity, making it appropriately self-limiting and never overwhelming. Chocolat Madagascar Dark 70% Velvety texture; very pleasing moderate sweetness and good flavor, with strong notes of hazelnut, caramelized sugar, rich chocolate, as well as subtle floral/fruity notes. Just like the 85%, it's $9 for 3 oz, which makes these 2 bars better value compared to the other 5. This one has a forgiving/mild taste (not unlike Goodnow Farms' Esmeraldas 70%), making it good for those who usually don't like dark chocolate. This definitely blows away your average chocolate bar, milk or dark irrelevant (it does has sunflower lecithin unlike the 85% bar though, if that bothers you). Chocolat Madagascar Dark 85% Flavor is undeniably better than your average dark chocolate bar, but lacking some complexity and refinement: primarily, I find that it isn't particularly well-rounded or balanced; what I did taste was decent though, with a "woody" quality and hints of citrus, yet it's unfortunately let down somewhat by a rough around the edges, distractingly acrid/astringent/tannic bitterness that also lingers in the mouth. Just an overtly acidic and bitter bar in general. Texture is fairly nice and smooth, although with slightly less cacao/cocoa butter than the 70% bar. Qantu Morropon 70% Best flavor: intense yet incredibly balanced, with a trailing "fruity" acidity that is offset by a mildly tannic/astringent background (like that you would find in sour berries) and hints of cream that accentuate the base chocolate taste; cherry is the most prominent fruit taste in my opinion, along with raspberry nuances and another "red" taste I couldn't quite put my finger on (no plums or anything, though). Yep, red tastes great. Texture is thoroughly smooth and melty, too, and perfectly complemented/carried the wonderful flavor; this is all in all a very refined, very balanced bar. Chocolate Tree Porcelana Venezuela 85% Most unique flavor: strong notes of cinnamon, and a warm "coppery" quality similar to leather perhaps; this is contrasted with an equally warm, comforting, "pure" chocolate taste with malt undertones, yet an odd (and somehow fitting) contrasting subtle mint flavomenthol coolness popping up every once in a while. Mouthfeel is very consistent, indicating that the cacao beans are completely and finely ground, and the cacao/cocoa butter content is decently generous too. Better value compared to the Goodnow Farms, Amedei, and Qantu bars. Amedei Toscano Black 90% Worst texture: a fair amount of cacao/cocoa butter is present, yet the problem is the sheer lack of even consistency/smoothness (you can clearly feel uneven particles of powder that aren't quite emulsified with the butter even with no chewing, despite the mouthfeel not being outright gritty or anything). Flavor is reminiscent of a fresh, floral chocolate cream and is surprisingly quite nice and balanced, though. Personal Ranking:

Update: I changed some of my descriptions and made the comparison(s) fairer, as I had eaten these chocolates in different contexts rather than consecutively in the same setting. Update 2: I'm going to review eleven 100% bars within the next couple of weeks, so stay tuned if you want to read that (1 will be the 100% bar I already reviewed here, so 10 new ones).
A bunch of Kyse reviews from their (now extended) Black Friday sale!
I placed an order for a bunch of 2ml Kyse samples on Black Friday. I was hoping to receive my package by Dec. 10, when their sale was supposed to end, because I had a suspicion I would want full sizes of a few things (spoiler: my suspicion was correct), and it WOULD have just barely made it... but I screwed up my own zip code and my package sat at the post office for a week before they figured out where to deliver it. BUT it turned out okay anyway, because Kyse has extended their Black Friday sale until January 1! I plan on picking up a couple of bottles tonight. Favorites: Delizia di Marshmallow, Frollino Lavanda (it just occurred to me that these might be REALLY good layered together, as well...) Cacao Noisette: Cocoa powder, hazelnut, caramel, Tahitian vanilla, and soft snuggly musk. I have a bit of a Nutella problem and so I probably shouldn’t buy things like this because it certainly doesn’t help, haha. The cocoa really is a dry cocoa powder note. This is my only real complaint- I was hoping for something richer, like Nutella itself. There isn’t a lot of musk, which I was hoping would make this more wearable for me, and I could do within the caramel. It’s not that I don’t like it- it’s just not quite what I had in mind. HOWEVER, I have to say: try layering this with Delizia di Marshmallow for hot cocoa perfection. Cocco Tiare: Tiare Absolute, Coconut Pulp CO2, Organic Tonka Bean Butter, Vanilla Beans and Cream This is sooo powdery. I think the tiare just does not agree with me... there is a sickly sweet floral note that the coconut and other notes cannot save. It reminds me of some bath product I’ve used in a hotel or something... it’s just too flowery for me. I think I am going to try Cocco alla Vaniglia in my next order to see what it would be like without the flowers. Delizia di Marshmallow: Marshmallow, vanilla, and sugar If you love marshmallow, buy this. It is not a gooey melty marshmallow OR a toasty marshmallow, but instead it’s like sticking your head into a fresh bag of soft, pillowy, fluffy marshmallows. It’s incredibly realistic. I’m buying this to spray all over myself and layer with everything I own. Frollino Lavanda: High elevation lavender, sugar, butter, caramel, beeswax, vanilla, blackberry This is the sugary, gourmand lavender of my dreams. There is a buttery, cookie-like note under the sweetest, best lavender and it’s SO good, with just a touch of blackberry to add juiciness. It’s like delicious lavender shortbread cookies and it lasts a long time! I am FSing for sure. Gateau de Carnavale: Funnel cake, vanilla latte, toasted brown sugar, and apricot This does not work on me from the first second I spray it on my skin. There’s a dark, almost burnt fried dough scent that is heavy and unpleasant, with maybe a little coffee. It reminds me of a funnel cake-scented candle. It lasts for a while because of course it does; that always happens when a perfume doesn't agree with me, hahah. J: Vanilla Absolute, Tobacco Absolute, Himalayan Cedarwood, and Agarwood This is reminding me sooo strongly of another perfume but I can’t figure out what it is. I think it might be one of my Smell Bent samples? Regardless, it’s pretty nice- an almost boozy vanilla with rich woods and tobacco. It sort of leans masculine on my skin. I love the vanilla/agarwood combination but I won’t FS because I really have a lot of things like this in my collection already- vanilla/wood/tobacco is one of my go-to scent profiles. Jasmine Macarons: Jasmine absolute from India, caramelized sugar, buttercream, heliotrope, and copaiba balsam, in a powdered sugar sandalwood base. It’s funny how gourmands are not usually my thing (except when marshmallow is involved) and neither are florals, but I LOVE flormands. I really like this when I first test it- there is a sweet, delicate (not at all indolic) jasmine over a creamy/toasty/caramel base. It’s very pretty but the caramel notes sort of take over and I actually find myself wanting more jasmine after a while. Luckily, as time goes on I find that the jasmine starts to re-assert itself and thus it ends up more balanced than I initially thought. I like this combination and might need to buy more after all! Macarons: I could not find a listing for this (it was a freebie), but I did find this on the website: “We're working on releasing our new cookie fragrance next week too, Macarons, as we've had so many requests for the base of our Jasmine Macarons without the florals. It will have a little cherry hinted almond in place of jasmine. “ It’s almondy and desserty and actually smells really nice, even though I normally dislike almond. At first the caramelized notes took this over, too, and it started to smell a bit too toasty, but then the sweetness came out and wow, this is unexpectedly delicious! I get more sandalwood and it’s actually less gourmand/cookie-like than the jasmine version. Oui Plus!: graham cracker, marshmallow, cocoa absolute, Peru balsam, patchouli, styrax and a bit of burnt coffee This has a little bit of a darker chocolate note than Cacao Noisette but it still gives me the impression of cocoa powder. There is also a toasty graham cracker note with some soft balsam and just a dab of patchouli that adds depth more than anything else. I don’t get any coffee but I think it is coming through in the “toasted” note I pick up on. I think this is nice, but although I am not generally a gourmand person- if I am going to smell like a s’more, I want to go all in and smell like melty chocolate and gooey marshmallow. This is more like a s’mores perfume than the scent/impression of actual s’mores. Vanille Debauche: Vanilla bourbon CO2, beeswax, boozy notes, amber, dried fruit, wood, tobacco. I accidentally sprayed this in my face instead of on my arm but it’s ok because it smelled really good. Sweet, boozy vanilla with beautiful beeswax. This is sweeter than J and I like it better. It’s a smooth, heavy vanilla. If you like vanilla, I cannot imagine anyone not liking this.

The percentage of cacao, cocoa or dark chocolate on a candy bar tells you how much combined cocoa powder and cocoa butter are present. The specific proportion of each is generally a trade secret ... These beans also produce cacao powder and cacao nibs, but the butter specifically comes from the cold-pressed oils in the beans. Cacao butter and cocoa butter keep candy bars perfectly melty, add smoothness and shelf life to skin care products and give recipes a deliciously mild chocolate flavor. Just like cocoa powder, you can use cacao powder to make brownies, cakes, cookies and other chocolatey desserts. Here are a few other ways to use cacao powder: Sprinkle on top of peanut butter on ... The process keeps the living enzymes in the cacao and removes the fat (cacao butter). Cocoa looks the same but it’s not. Cocoa powder is raw cacao that’s been roasted at high temperatures. Sadly, roasting changes the molecular structure of the cacao bean, reducing the enzyme content, and lowering the overall nutritional value. What is Cacao Butter? In its original form, raw cacao butter comes from cacao beans which grow on the Theobroma cacao tree. These cocoa beans are the same ones that produce chocolate and cocoa powder. To make the butter, cacao beans are cold pressed to extract the oil — similar to olives and olive oil. Cocoa powder and cacao powder are very similar, the only difference being that cocoa is processed at a much higher temperature (and often packaged cocoa contains added sugar and dairy). Both start out as beans from the cacao plant (confusing, right?), which are separated from the fatty part known as cocoa butter. Cocoa powder, meanwhile, comes from fermented and roasted beans that are processed at a higher heat and milled into a powder. Cocoa powder is often alkalized during processing (or Dutch-processed) to reduce acidity. The result is a product that’s less bitter and more soluble when added to liquids. This separates out the cocoa butter (fat) from the bean, and then the remaining dry bean is ground into the powder. Cocoa powder is similar, but processed at much higher temperatures. This makes it a bit less bitter, but it also reduces the nutritional value slightly. Try grabbing some cacao powder and whipping up these different recipes. That’s cacao powder. It tastes more bitter than cocoa powder but offers more nutritional content and is considered more natural. What is cocoa powder? Cocoa powder, on the other hand, is created when the beans are processed at a much higher temperature. The beans are not only fermented but also roasted (cacao powder only involves fermentation). What happens next determines whether the beans become cacao or cocoa. They start from the same place, but the processing makes all the difference.
